When a player gets past their defender off of the dribble they might not always have a wide open lane to the basket. There may be congestion and bodies in the way that they have to navigate through. However the original defender is still trying to fight to get back in the play and cut the ball handler off again. That is why once the dribbler beats their defender they need to cut them off and keep them on their hip.

The reason why is because in a game the player needs to be able to read the defense, and then take what is given.
